🎃 Roasted Pumpkin — My Favourite Autumn Comfort Food

Roasted pumpkin is one of my all-time favourite comfort foods. It’s a classic in Bulgaria, so beloved that there’s even a famous short story dedicated to it. Pumpkin arrives with autumn, bringing warmth, colour, and a sense of coziness that lasts through the cold winter days. It’s delicious, naturally sweet, light yet satisfying — the kind of simple food that feels like a hug. Here’s how I make mine:

✨Ingredients

  • 1 butternut-type pumpkin (called цигулка/violin in Bulgarian)

  • A little butter

  • A little brown sugar

  • Cinnamon (a generous sprinkle!)

  • Raisins (soaked beforehand, e.g. in water, orange juice, rum...)

  • Walnuts (crushed)

🪄Preparation

Cut the pumpkin into slices or chunks — no need to peel it.
Place the pieces on a baking tray lined with parchment paper, skin side down.

On each piece, add:

  • a small pat of butter

  • a sprinkle of brown sugar

  • a dusting of cinnamon

  • crushed walnuts

  • raisins (softened from soaking)

Bake in a preheated oven at 180°C with fan, until the edges begin to brown slightly — about 35–40 minutes.

The result: soft, caramelised, fragrant pumpkin that tastes like autumn baked into a tray.

💛 Why I Love It

I love roasted pumpkin simply because it’s orange, soft, and comforting. There’s something tender and warm about it: the way it turns velvety in the oven, the way its colour glows like late-autumn sunlight, the way its sweetness feels gentle rather than demanding. It’s soft, soothing, and a little bit dreamy — exactly the kind of food that makes you slow down and smile.
